Rainbow Cupcakes


Hi, I'm Emma and I have an obsession with baking cakes... 

The weird thing is, I never actually eat my own cakes - I make them & My Boyfriend eats them (and takes them to work for the lads)! Although, I may have to try these bad boys out as i'm quite impressed with how they turned out! 

If you want to give them a try, here's my step by step 'How to...' 

For 12-18 Cakes, you will need:
110g Caster Sugar
110g Margarine (softened) 
110g Self raising flour (sifted)  
2 Medium Eggs 
1tbsp Milk
1 tsp Vanilla Essence
Food colouring x 4 (Red, Blue, Green & Yellow work best) 

For the icing: 
140g Margarine (softened)
280g Icing Sugar
1-2tbsp Milk


Step 1:
Mix together the Sugar & Margarine until light and creamy...

Step 2:
Add the eggs and the milk then fold together (add a little flour if you need to stop it curdling)... 

Step 3:
Add the flour and the vanilla essence and mix together...

Step 4:
Separate into 4 bowls and one of the food colouring to each bowl. Mix together until fully blended...

Step 5:
Divide into cake cases by using a teaspoon of each mixture in each case. The messier it is, the better it will turn out!

Bake for approximately 12-18 minutes (checking after 12 minutes every 3 minutes) and then transfer to a board to cool. 


Step 6 - The Icing:
Mix together softened margarine and icing sugar, gradually adding the icing sugar (to avoid a puff of white going all over you!) and pipe / spoon onto cool cakes. Sprinkle with whatever topping you like, I went for Nerds as they are so colourful. 

And there you have it! I love making cakes and after Adam bought me this cute cupcake maker for christmas, I haven't stopped using it.
