Cake mixture:
120g self raising flour
120g butter
120 caster sugar
2 eggs
1tbsp cocoa powder
Icing:
120g butter
240g icing sugar
1 pack Oreos
To make these delicious Oreo cupcakes you need to first set your oven to 160 degrees and place 12 cupcake cases onto a cupcake baking tray.
Cream the butter and sugar together gently until the mixture is of a smooth consistency. Add 1 egg at a time and carefully sift the self raising flour in, alternating between the two. Add 1 tablespoon of cocoa powder and spoon mixture into the cupcake cases. Bake for 20 - 24 minutes.
Whilst your cakes are baking you can make the butter icing. Carefully cream the butter and icing sugar together, by adding spoonfuls of the icing sugar now and again. You can either leave your icing as plain butter icing or you could add crushed Oreo to give the speckled effect above. To do this, use a rolling pin to crush a few Oreo biscuits until they are crumbled into very small, dust like pieces. And stir into your icing mixture.
Once the cakes are ready, leave to cool before piping your icing on. When all the cakes are iced you can add half an Oreo to each one (as pictured above).

These look sooo yummy, such a shame I'm allergic to gluten :( maybe I could find a gluten free alternative :)
